So this is mainly a post for all your mothers out there with picky eaters. Jordan is (and continues to be) one of the smallest girls in her class. At a whopping 27 pounds at 3 years old it's a constant struggle to get her to eat enough. That being said, there are three meals that we have in our rotation that I can ALWAYS count on her to eat.
1). Chicken Tortilla Soup
I pinned this recipe years ago and it's still a go-to. It doesn't hurt that you can make in the slow cooker as well (we all know my love for the slow cooker...but that's for another post). We are also HUGE lovers of avocado and it's nice to find meals that we can incorporate this healthy fat. You can find the recipe here
2). Spinach Lasagna Roll Ups
This is a meal that involves some prep (and it better in Fall) but it can also be frozen and it is SO good. This is also a good way to sneak some greens in-AND you can use frozen spinach!!

3). Chicken Broccoli Shells and Cheese
If I'm not feeling pressed for time (which is almost never the case these days) I boil some pasta and make this from scratch. We are BIG fans of Annie's Mac N Cheese so most days if I make this, I'll try and mix it with either broccoli or peas-depending on what you have on hand. It is by far the thing we make most frequently.
I would love to say that our daughter prefers the fresh Cooper River Salmon that we eat on the reg or the numerous yummy salads we try...but most often it's these three dishes. We also tend to make a lot of deconstructed meals that seem a lot more manageable to a toddler than when it is all mixed together! Whether you work out of the home like I do or you are a stay at home mom, the responsibilities are all the same, putting dinner on the table every night.
